    简单家常菜谱之春天吃什么

    春天有很多时鲜,除了时令蔬菜,还有其他一些鲜物,高档的刀鱼,动辄几千块钱一斤,还非要那几天才能吃到,家常的比如螺师,清明节前最好,在家的时候,隔日就吃,爸爸常常蹲在厨房剪螺师的尾巴。美国大农村这些就不要想了,捡几样中国店的蔬菜尝尝鲜。
     
    • 青蒜。 青蒜可以入菜,入汤,和很多家常食才都配。最好在快要起锅的时候加,不然有股浊味。
    • 青蒜豆腐肉末:肉丁加一点生抽,淀粉,再加一点油,拌匀,肉末就不用这么麻烦,加一点生抽调味就可以,下锅炒肉,变色就可以了,不用盛起,直接加切2厘米见方的嫩豆腐块。加盐,鸡精,一点水,和肉炒匀,下手要轻点,豆腐碎了就不好看了。三五分钟足够了,起锅前加斜切成薄片的青蒜,炒匀装盘。
    • 青蒜蘑菇肉片:用肉片替肉丁,用圆蘑菇片替豆腐,照做。

     

    • 莴笋。凉拌最好,清炒也不错。凉拌的调料,我通常只用一种组合,百搭。不过,拌莴笋可以用另一个特别点的调味,不要浪费稀罕物儿。一两块白豆腐乳,红的也行,一勺芝麻酱,一勺麻油,两瓣蒜切末,拌匀,这就是调味了。莴笋切丝,不耐烦的切滚刀块都可以,拌上就好。
